<p><em><strong>Ingrediente:</strong></em></p>
<p>1 kg de peste crap, stiuca, salau, 1 pahar untdelemn, 1 morcov, 1 ceapa mare, 1 patrunjel, o felie de telina, 1 pahar boabe de mazare verde, 100 g de fasole verde, 4-5 rosii sau 2 linguri de bulion de rosii, piper, sare, verdeata.</p>
<p><em><strong>Mod de preparare:</strong></em></p>
<p>Pestele curatit se taie in bucati si se sareaza. Dupa o jumatate de ora se zbiceste in servet si se prajeste in untdelemn incins. Separat se prajeste ceapa in untdelemn. Se adauga morcovul si patrunjelul curatit si taiat in felii rotunde, mazarea boabe si fasolea curatita si rupta in bucati</p>
<p>Se fierb inabusit. Cand sunt moi, se adauga bulionul subtiat cu apa sau rosiile taiate felii, pestele, sarea necesara, verdeata si piperul boabe. Cratita se da la cuptor si se lasa la foc potrivit sa scada.</p>

<p><em><strong>Ingrediente: </strong></em></p>
<p>500 g de peste afumat, 4 mere, 2 teline, 2 morcovi, 2 cartofi, 2 salate verzi, 2 ridichi negre, o varza dulce mica, 4 linguri de ulei de masline, o lingura de mustar, o lingura de otet, o lamaie, patrunjel verde, piper, sare</p>
<p><em><strong>Mod de preparare:</strong></em></p>
<p>Merele, telina, morcovii, ridichiile negre si varza se curata, se spala si se trec pe razatoare, se sareaza si se pipereaza, dupa gust, lasandu-se sa stea 30 de minute. Se curata cartofii de coaja, se spala si se fierb intregi, dupa care se scurg de apa si se taie in cubulete. Se amesteca bine cartofii cu 2 linguri de ulei. Din mustar si uleiul ramas se prepara un sos care se toarna peste zarzavatul ras. Se adauga apoi si cartofii si se amesteca usor. Pestele se curata de oase, se taie in cubulete si se pune peste salata de legume. Se potriveste gustul de sare si piper. Atentie! Pestele afumat este sarat! Salata verde se desface frunza cu frunza, se spala si se aranjeaza pe farfurii, dupa care se aseaza salata de peste afumat cu cruditati. Se orneaza cu salata verde taiata fideluta, cu feliute de lamaie si cateva frunze de patrunjel.</p>

<p><em><strong>Ingrediente</strong></em></p>
<p>4 fileuri de somon[150g-200g fiecare]<br />
2 shallots[arpagic mai mare sau o ceapa dulce, marime mijlocie]<br />
2 linguri ulei de masline<br />
1 pahar vin alb sec<br />
1/2pahar smantana<br />
2 lingurite mustar cu seminte[moutard a l'anciene]<br />
2 linguri tarhon, proaspat tocat</p>
<p><em><strong>Mod de preparare</strong></em></p>
<p>Intr-o tigaie mai mare se caleste usor,pina devine transparent ceapa sau arpagicul, in uleiul de masline. Se adauga peste ceapa si ulei, fileurile de somon cu pielea in sus. Dupa 2 minute se intorc fileurile pe cealalta parte, se adauga vinul alb, se acopera tigaia si se da focul mai mic. Dupa 5 minute se ridica capacul de pe tigaie, se sareaza si pipereaza fileurile apoi se scot pe o farfurie si se tin acoperite. In sosul din tigaie se adauga mustarul si smantana amestecidu-se continuu. Se lasa inca 2-3 minute pe foc timp in care se potriveste de sare si piper. Se aduga tarhonul tocat si se stinge focul. Sosul se serveste peste somon in fiecare farfurie. Cu aceste ingrediente se pot face portii pentru 4 persoane.</p>

<p><em><strong>Ingrediente</strong></em></p>
<p>4 pesti (de preferinta macrou sau pastrav), 4 lamai, 4 cepe, 70 g faina, 2 foi de dafin, 1/2 l bere, 20 g sare, piper.</p>
<p><em><strong>Mod de preparare</strong></em></p>
<p>Cureti pestii si ii speli cu apa si cu zeama de la jumatate de lamaie. Usuci pestii si ii presari cu sare si piper, apoi ii dai prin faina. Ceapa si lamaile ramase le tai rondele. Rupi frunzele de dafin bucatele. Pui pestii in tava, ii inconjori cu rondele de ceapa, iar feliile de lamaie le pui deasupra. Stropesti pestii cu ulei si torni bere peste ei, cat sa-i acopere. Acoperi vasul cu folie de aluminiu si il dai la cuptor, la foc potrivit, timp de 30 de minute. Apoi scoti folia de aluminiu si mai lasi vasul la cuptor inca 10 minute sa se rumeneasca pestii.</p>

<p><em><strong>Ingrediente</strong></em></p>
<p>4 fileuri de peste, 2 verze rosii, 1 fir de praz, 2 oua, 3 linguri de faina, 100 ml lapte dulce, 3 linguri otet, ulei de masline, sare, piper, marar.</p>
<p><em><strong>Mod de preparare</strong></em></p>
<p>Speli fileurile de peste, le pui pe un servet absorbant, apoi pe o farfurie. Bati bine ouale cu furculita, le amesteci bine cu laptele dulce, faina, sarea si piperul dupa gust. Treci fileurile de peste prin acest amestec si le prajesti in ulei incins. Le scoti cu o spumiera, le pui pe un platou si le dai deoparte. Speli verzele, le toci marunt si le pui intr-un castron. Adaugi otetul, 2 linguri de ulei, sare si piper, dupa gust. Amesteci totul, acoperi cu un capac si le pui in frigider pentru 30 de minute. Cureti prazul de foile vestede, le speli si le tai in rondele subtiri. Scoti salata de varza din frigider, adaugi rondelele de praz si mararul tocat. Amesteci si servesti alaturi de fileurile de peste calde. Sa nu uiti vinul langa acest preparat.</p>

<p><em><strong>Ingrediente</strong></em></p>
<p>1 stiuca mare de 1 &#8211; 1,500 kg, 100-150 g franzela de o zi, 1/4 l lapte, 50 g stafide, 50 g zahar, 200 g ceapa, 100 ml ulei, 1 morcov, 1 radacina de patrunjel, 1 foaie de dafin, piper, sare.</p>
<p><em><strong>Mod de preparare</strong></em></p>
<p>Se alege o stiuca mare si proaspata, se curata de solzi, apoi se cresteaza in jurul capului si se trage pielea. Cand s-a ajuns la coada se taie pe dinauntru in asa fel ca pielea sa ramana impreuna cu coada. Se curata pielea scoasa de resturile de carne care nu s-au desprins. Aripioarele si coada se tund putin cu foarfeca.</p>
<p>Se curata toata carnea de pe sira spinarii, se adauga cea curatata de pe piele, se amesteca cu ceapa calita (fara sa se rumeneasca), painea inmuiata in lapte, sare, piper, dupa gust. Se trece totul prin masina de tocat se mai adauga un ou batut, zahar, sare, piper pisat, dupa gust, si stafide. Se amesteca bine si cu compozitia respectiva se umple pielea de stiucacare se coase apoi la gura (gat) si in locurile in care eventual se rupe.</p>
<p>Se ia un vas de marime potrivita, cu apa cat sa cuprinda pestele, se pun in el capul si oasele ramase, foaia de dafin, 1 ceapa, morcovul, radacina de patrunjel, boabe de piper si sare dupa gust. Se lasa mai intai sa fiarba legumele circa 30 min, dupa care se introduce stiuca umpluta, care trebuie intepata cu un ac pentru ca pielea sa nu crape. Se fierbe 20-30 minute lent (fara sa dea in clocote mari), dupa care se da vasul jos de pe foc si se lasa sa se raceasca stiuca umpluta in zeama in care a fiert. Dupa ce s-a racit bine, se scoate din zeama si se taie in felii in momentul servirii. Se aranjeaza pe un platou, se aplica la un capat capul, la urma coada reconstituind forma pestelui. Se toarna deasupra zeama strecurata, se garniseste cu cateva felii de morcov, crengute de patrunjel verde si se lasa sa inchege zeama. Se serveste rece, cu salata de sfecla rosie cu hrean.</p>

<p><em><strong>Mod de preparare</strong></em></p>
<p>Se curata stiuca de solzi si de intestine, se taie capul (care foloseste la ciorba de peste, daca este mai mare), iar corpul se spala si se taie in bucati. Bucatile se sareaza (eventual pentru un gust mai bun se ung cu zeama de lamaie), apoi se dau prin lapte in care se poate dauga si un ou (pentru ca la prajit sa capete o culoare rumena si o coaja crocanta si gustoasa), prin faina si se se prajesc in ulei incins. Daca uleiul nu este bine incins, pestele fierbe in loc sa se prajeasca, pierzand din gust, si se imbiba cu ulei. Stiucile mici se prajesc intregi, doar se inlatura capul, taindu-se scurt.</p>

<p><em><strong>Ingrediente</strong></em></p>
<p>1 kg burta de somn, 50 ml ulei, 50 ml otet, piper boabe, 1 ceapa, 1 morcov, foi de dafin, cartofi, sare.</p>
<p><em><strong>Mod de preparare</strong></em></p>
<p>Se taie pestele (partea de la burta sau de la coada) in bucati (cate 2-3 la o portie) care se sareaza bine si se lasa acoperite 2-3 ore la rece. Se pune la fiert apa impreuna cu legumele taiate in felii, foile de dafin, boabele de piper si sare. Cand sunt fierte legumele, se adauga otetul si pestele taiat in felii sau in bucati si se lasa sa fiarba 6-10 minute. Apoi se ia vasul de pe foc si se lasa totul sa se raceasca. In momentul servirii se scot bucatile de somn din zeama in care au fiert si se aranjeaza pe un platou dupa care se garnisesc cu legumele cu care au fiert impreuna, iar peste acestea se toarna un sos pregatit astfel: se piseaza usturoi, se dizolva cu zeama de peste si se adauga piper pisat si otet dupa gust. Se serveste rece.</p>
